• 1 cup sushi rice, short-grain and uncooked • 1/2 cup cider vinegar • 1 tablespoon sugar • 1 small red onion, thinly sliced • 1/3 cup mayonnaise • 4 teaspoons sriracha chili sauce • 1 pound chicken breast, boneless and skinless • 2 tablespoons reduced-sodium soy sauce • 2 teaspoons toasted sesame oil • 1 teaspoon honey • 1 medium ripe avocado, peeled and sliced • 1/2 small cucumber, thinly sliced • 1 cup alfalfa or bean sprouts • green onions, to taste, sliced


Step 1

Cook the rice per package instructions.

Step 2

Whisk together vinegar and sugar until dissolved.

Step 3

Add red onions to the vinegar mixture.

Step 4

Place the red onion mixture in a sealable jar and refrigerate for 30 minutes.

Step 5

Stir together the mayonnaise and chili sauce.

Refrigerate the sriracha mayo and cover.

Toss the chicken, soy sauce, sesame oil, and honey in a large skillet or wok.
