Peach Cobbler

Just the summer dessert you were looking for! Ripe peaches baked in a delicious cobbler served hot with some vanilla ice cream. YUM! This is the perfect way to end your next barbecue.


• 4 cups peaches ripe, peeled, pitted and sliced • 1/2 cup sugar • 2 tablespoons cornstarch • 1 tablespoon lemon zest • 1 tablespoon lemon juice Cobbler: • 1/2 cup butter unsalted, cut into cubes • 1 cup all-purpose flour all purpose • 1 tablespoon baking powder • 1/4 teaspoon salt • 1/2 cup sugar granulated • 1 large egg • 1 teaspoon vanilla extract • 1 cup milk


Step 1

Begin by preheating your oven to 375 degrees F.

Step 2

To make the filling, add peaches, sugar, cornstarch, lemon zest, and lemon juice to a medium-sized saucepan. Bring the mixture to a simmer for 5 minutes. Stir continuously until the peaches start to soften.

Step 3

Melt the butter by placing the cubes in a 9x9 baking dish and putting it into the preheated oven until the butter has melted.

Step 4

To create the cobbler batter, add the flour, baking powder, salt, sugar, egg, vanilla, and milk to a bowl and whisk until the flour is just combined.

Step 5

Pour the peaches into the baking dish over the melted butter and pour the batter evenly over the peaches.

Step 6

Bake in the oven for 40-45 minutes or until the cobbler is a nice, golden brown. Serve immediately with some ice cream.
