IngredientsFor the topping: • 4 slices thick and hearty bread, white or whole wheat • 5 tablespoons butter, cold and cut into 1/2-inch pieces • 1 tablespoon granulated sugar • 1/4 teaspoon ground cinnamon For the peach filling: • 2 tablespoons butter • 3 1/2 pounds peaches, peeled, pitted, and cut into 1/2-inch wedges • 1/3 cup granulated sugar • 1/3 cup packed light brown sugar • 1 tablespoon lemon juice • 1 teaspoon vanilla extract • 1/8 teaspoon salt For serving: • vanilla ice cream, optional, to taste
Adjust the oven rack to the middle position.
Preheat the oven to 400 degrees F.
In a food processor, pulse the bread and 5 tablespoons of the cold butter until it is coarsely ground.
In a small bowl, combine 1 tablespoon sugar with the cinnamon.
In a large nonstick, oven-safe skillet over medium heat on the stove-top, melt the remaining 2 tablespoons butter.
Add the peaches and cook until they are softened and begin to caramelize, for about 8-12 minutes.
Transfer the skillet from the heat.
Stir in 1 cup of the bread and butter mixture, 1/3 cup granulated sugar, brown sugar, lemon juice, vanilla, and salt.
Top the peach mixture with the remaining bread crumb mixture.
Sprinkle the bread crumbs on top with the cinnamon sugar.
Bake on the middle rack until the topping is golden brown and the juices are bubbling, for about 20 minutes.
Allow the Peach Betty to cool for 20 minutes.
Serve with vanilla ice cream.
