• 4 (4-ounce) turkey breast cutlets • kosher salt, to taste • fresh pepper, to taste • 1/3 cup seasoned bread crumbs • 2 tablespoons parmesan cheese • 2 large egg whites, beaten • 1 tablespoon butter • 1 teaspoon olive oil • lemon wedges, optional, to taste, for servingDirections
