Ingredients
• 2 tablespoons olive oil • 2-3 chicken breasts, boneless, skinless, and cut into bite-sized pieces • salt, to taste • pepper, to taste • 1 teaspoon Italian seasoning, plus more for optional sprinkling to taste • 1/2 teaspoon garlic powder • 3 cloves garlic, minced • 1 medium yellow onion, minced • 1 (24 ounce) jar marinara sauce • water, to fill the empty marinara sauce jar • 16 ounces short-cut pasta, dried • 1/2 cup parmesan cheese • 1 cup mozzarella cheese • additional Italian seasoning, optional, to taste • parsley, optional, minced, for garnish • basil, optional, minced, for garnishDirections
In a Dutch oven or large pot, pour the olive oil over medium-high heat.
Once the oil is heated, add in the chicken, salt, pepper, Italian seasoning, and garlic powder.
Cook until the chicken is nearly cooked through, about 5 minutes. Transfer the chicken from the pot.
Add the garlic and onion to the pot and cook until soft and aromatic, about 2-3 minutes.
Pour the marinara sauce into the pot.
Refill the jar with water and add it to the pot.
Bring the mixture to a boil, then reduce it to a simmer.
Add the chicken and pasta to the bowl.
Allow the pasta and chicken to cook through, the chicken reaching 165 degrees F and the pasta reaching al dente according to package directions.
After the pasta is cooked, stir in the parmesan cheese and 1/4 cup of the mozzarella.
Sprinkle the remainder of the mozzarella cheese on top of the dish and cook until the cheese is melted, about 2-3 minutes.
Sprinkle the remaining Italian seasoning on top.
Garnish with the parsley and basil.
Serve!
