IngredientsFor the cherry filling: • 5 cups cherries, pitted, sweet or sour • 1/3 cup granulated sugar • 2 tablespoons cornstarch • 1 tablespoon fresh lemon juice • 1/2 teaspoon pure vanilla extract • 1/4 teaspoon pure almond extract For the topping: • 1 cup rolled oats • 1/3 cup all-purpose flour • 1/3 cup whole wheat flour • 1/2 cup brown sugar, lightly packed • 1 teaspoon ground cinnamon • 1/2 teaspoon kosher salt • 1/2 cup unsalted butter, melted • vanilla ice cream, whipped cream, or yogurt, optional, for serving
Place an oven rack in the center position.
Preheat the oven to 375 degrees F.
Lightly coat a 9x9-inch or a 7x11-inch baking dish with nonstick spray.
In a large bowl, gently stir the cherries, granulated sugar, cornstarch, lemon juice, vanilla, and almond extract together.
Pour the cherry mixture into the prepared baking dish in an even layer. Make sure you pour in any accumulated juices at the bottom of the bowl as well.
