Ingredients• 1/2 cup granulated sugar • 3/4 cup brown sugar • 1 teaspoon kosher salt • 8 tablespoons unsalted butter, softened • 1 large egg • 1 teaspoon vanilla extract • 1 1/4 cups all-purpose flour • 1/2 teaspoon baking soda • 2 cups chocolate chips • sea salt, to taste • milk, for serving
In a large bowl, whisk together the kosher salt, granulated sugar, brown sugar, and butter, until a paste with no lumps forms.
Whisk in the vanilla and egg, beating until light ribbons fall off of the whisk and remain shortly before dissolving back into the mixture.
Sift in the baking soda and flour, then fold with a spatula to combine, being cautious to not over-mix.
Fold in the chocolate chips.
Chill the dough for 30 minutes, or overnight if a richer flavor is desired.
Preheat the oven to 350 degrees F.
Then, line a baking sheet with parchment paper.
Scoop the dough up with an ice-cream scoop onto the prepared baking sheet, leaving 4 inches of space between the cookies and 2 inches of space from the edges of the pan.
Bake until the edges have started to slightly brown, for 12-15 minutes.
Top each cookie with a sprinkle of salt, to taste, once they come out of the oven.
Let the cookies fully cool before serving with a glass of milk.
