Ingredients• 1 cup butter, softened • 2 cups sugar • 2 large eggs, room temperature • 2 teaspoons grated lemon zest • 2 teaspoons lemon extract • 4 cups all-purpose flour • 1 teaspoon baking soda • 1 teaspoon salt • 1 cup buttermilk
Beat together the butter and sugar until light and fluffy. Add 1 egg at a time, beating well each time. Beat in the lemon zest and extract.
Whisk together flour, baking soda, and salt in a bowl. Add the cream mixture and buttermilk, alternating. Cover and refrigerate.
Preheat the oven to 375 degrees F.
Drop the cookie batter on an ungreased baking sheet by the tablespoonfuls. Bake for 7-10 minutes or until lightly browned.
