Mom's Chicken Orzo Salad

Just like Mom used to make! Mom’s Chicken Orzo Salad is easy and quick to make, and it makes for a perfect summer lunch, dinner, or side dish. Refreshing arugula, bright and bursting grape tomatoes, and creamy goat cheese mingle with tender orzo and juicy grilled chicken for a hearty yet light meal. Mom’s Chicken Orzo Salad is anything but boring, so make sure you make enough for everyone!


• 1 1/4 cups orzo, uncooked • 3 cups chicken breast strips, grilled and chopped • 1 1/2 cups arugula, trimmed • 1 cup grape tomatoes, halved • 1/2 cup red bell pepper, chopped • 1/4 cup red onion, chopped • 2 tablespoons basil, chopped • 1 teaspoon oregano, chopped • 2 tablespoons red wine vinegar • 1 tablespoon extra-virgin olive oil • 1/8 teaspoon salt • 1/8 teaspoon black pepper • 6 tablespoons goat cheese, crumbled


Step 1

Cook the orzo pasta according to package directions. Drain well.

Step 2

Combine the cooked pasta, chicken, arugula, grape tomatoes, red bell pepper, red onion, basil, and oregano in a large bowl, tossing well.

Step 3

Combine the vinegar, oil, salt, and black pepper in a small bowl, stirring with a whisk.

Step 4

Drizzle the vinegar mixture over the pasta mixture, tossing well to coat.

Step 5

Sprinkle the pasta with the cheese.
