Mom’s Chicken Orzo Salad is anything but boring, so make sure you make enough for everyone!
Ingredients• 1 1/4 cups orzo, uncooked • 3 cups chicken breast strips, grilled and chopped • 1 1/2 cups arugula, trimmed • 1 cup grape tomatoes, halved • 1/2 cup red bell pepper, chopped • 1/4 cup red onion, chopped • 2 tablespoons basil, chopped • 1 teaspoon oregano, chopped • 2 tablespoons red wine vinegar • 1 tablespoon extra-virgin olive oil • 1/8 teaspoon salt • 1/8 teaspoon black pepper • 6 tablespoons goat cheese, crumbled
Cook the orzo pasta according to package directions. Drain well.
Combine the cooked pasta, chicken, arugula, grape tomatoes, red bell pepper, red onion, basil, and oregano in a large bowl, tossing well.
Combine the vinegar, oil, salt, and black pepper in a small bowl, stirring with a whisk.
Drizzle the vinegar mixture over the pasta mixture, tossing well to coat.
Sprinkle the pasta with the cheese.
