Mexican Meatloaf is a delicious home-cooked date night meal, as it makes two loaves: one for you and one for your special someone. Alongside mashed potatoes or roasted vegetables, this meatloaf is guaranteed to amaze.


• 1 large egg, lightly beaten • 3/4 cup diced tomatoes, canned, drained • 1/2 cup tortilla chips, crushed • 1/4 cup cheddar cheese, shredded • 1/4 cup salsa • 2 tablespoons taco seasoning • 2 tablespoons onion, diced • 2 tablespoons ripe avocado, diced • 1/8 teaspoon pepper • 1/2 pound lean ground beef


Step 1

Preheat the oven to 350 degrees F.

Step 2

In a bowl, combine the egg, tomatoes, tortilla chips, cheddar, salsa, taco seasoning, onion, avocado, and pepper.

Crumble the beef over the mixture and stir until well combined.

Shape the mixture into two loaves.

Place the loaves onto an ungreased 8-inch baking dish.

Bake until the meat is no longer pink and a thermometer inserted into the thickest part reads 160 degrees F, about 30-40 minutes.
