Ingredients• 3 tablespoons lemon juice • 3 tablespoons butter, melted • 1/4 cup all-purpose flour • 1/2 teaspoon salt • 1/4 teaspoon paprika • 1/4 teaspoon lemon pepper seasoning • 4 (6-ounce) cod filets • 2 tablespoons fresh parsley, minced • 2 teaspoons lemon zest, grated
Preheat the oven to 400 degrees F.
Coat a 9x13-inch baking dish with cooking spray.
In a shallow bowl, mix the lemon juice and butter.
In a separate shallow bowl, mix the flour, salt, paprika, and lemon pepper seasoning.
Dip the filets in the lemon juice mixture and then in the flour mixture to coat both sides. Shake off the excess.
Place the filets in the prepared baking dish.
Drizzle the cod with the remaining lemon juice mixture.
Bake until the fish has just begun to flake easily with a fork and it is cooked through at 145 degrees F, about 12-15 minutes.
Turn on the broiler and broil until golden brown, about 2-3 minutes. Keep a close eye on it so it doesn't burn.
Mix the parsley and lemon zest.
Sprinkle the parsley mixture over the fish.
