Ingredients

• 1 pound spaghetti • 2 teaspoons sesame oil • 3 green onions, thinly sliced • 2 teaspoons ginger, freshly minced • 1 pound shrimp, peeled, deveined • kosher salt, to taste • freshly ground black pepper, to taste • 1 tablespoon extra-virgin olive oil • 2 bell peppers, chopped • 3 cloves garlic, minced • 2 tablespoons cornstarch • 1/3 cup low-sodium soy sauce • 1/2 cup low-sodium chicken broth • 1/4 cup sweet chili sauce • 2 tablespoons sriracha • 2 tablespoons rice vinegar • 1/2 cup peanuts, roasted • cilantro, optional, freshly chopped, for garnish

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

Add the pasta to the pot and cook it to al dente according to the package directions.

Step 3

Drain the pasta.

Step 4

In a large skillet over medium heat, heat the sesame oil.

Step 5

Add the green onions and ginger and cook until fragrant, about 1 minute.

Step 6

Add the shrimp.

Step 7

Season the shrimp with salt and pepper.

Cook the shrimp until opaque and cooked through at 145 degrees F, about 3 minutes.

Transfer the shrimp from the skillet.

Heat the olive oil in the same skillet.

Add the bell peppers and cook until soft, about 5 minutes.

Add the garlic and cook until fragrant, about 1 minute.

Add the cornstarch and stir to combine.

Pour in the soy sauce, chicken broth, sweet chili sauce, sriracha, and rice vinegar, and whisk until combined.

Simmer until the sauce thickens slightly, about 1-2 minutes.

Add the pasta, shrimp, and peanuts to the skillet, tossing to combine them with the sauce.

Garnish with cilantro.
