Ingredients• 4 medium beets, cooked and wedged • 11 tablespoons balsamic vinaigrette • 8 cups baby greens • 2 ounces soft goat cheese • 1 shallot, thinly sliced • 1/4 cup pistachios, roasted, salted, and roughly chopped
In a medium bowl, place the beets and toss in the balsamic dressing.
Evenly divide the greens between 4 plates.
Transfer the beets from the dressing bowl and place them on top of the greens.
Add the goat cheese, shallots, and pistachios to the salad.
Drizzle with the salad dressing.
