Italian Chicken Casserole

• 2 pounds boneless, skinless chicken breasts, cut into 1/2-inch cubes • 2 tablespoons butter • 1 small onion, chopped • 2 cloves garlic, minced • 1/4 cup red bell peppers, diced • 1 (10.75-ounce) can cream of chicken soup • 1 cup milk, or half and half • 1/2 cup chicken stock • 4 ounces cream cheese, cubed • 1 envelope dry Italian dressing mix (2 tablespoons of the mix) • 3 tablespoons parmesan cheese, grated and divided • 8 ounces uncooked bowtie, farfalle pasta, or your choice of shaped pasta


Step 1

To begin, cook the pasta according to the package instructions, except regarding the recommended cook time. Instead, cook the pasta for 2-3 minutes less. Drain and set aside.

Step 2

Melt the butter in a large skillet over medium heat. Brown the chicken cubes.

Step 3

Add the garlic, onion, and bell pepper to the skillet and sauté for 3 minutes, or until the onion is translucent.

Step 4

Then add the soup, milk, and chicken stock, whisking until smooth.

Step 5

Next add the cubed cream cheese, stirring until it's melted and fully combined into the sauce.

Step 6

Add in the dressing mix and 2 tablespoons of the parmesan cheese, stirring until fully combined.

Step 7

Finally, add in the cooked pasta and toss until well coated and heated through.

Step 8

Preheat the oven to 350 degrees F.

Step 9

Prepare a 2-quart casserole dish (11x7- or 9x9-inch) with nonstick cooking spray.

Step 10

Place the chicken/pasta mixture into the prepared pan. Sprinkle with the remaining 1 tablespoon of parmesan cheese.

Step 11

Bake for 30-40 minutes, or until the pasta is golden brown and the sauce is bubbling.
