Ingredients
• 1 cup zucchini, grated • 1/4 cup carrot, grated • 1/4 cup seasoned bread crumbs • 1/4 cup feta cheese, crumbled • 1/4 cup fresh basil, chopped • 1 egg • 1/2 teaspoon salt • 1/4 teaspoon ground black pepper • 1/8 teaspoon dried oreganoDirections
Step 1
Preheat the oven to 400 degrees F.
Step 2
Spray a mini-muffin tin with cooking spray.
Step 3
Combine the zucchini and carrot in a large bowl, squeezing out any excess water with a paper towel.
Step 4
Add the breadcrumbs, feta cheese, basil, egg, salt, black pepper, and oregano into the zucchini-carrot mixture.
Step 5
Scoop the mixture using spoons or a mini ice cream scoop into the prepared muffin tin.
