Ingredients• 1 tablespoon vegetable oil • 3 1/2 pounds beef chuck pot roast • 2 teaspoons salt • 1 teaspoon ground black pepper • 1 cup carrots, diced • 1 cup celery, diced • 1 cup onion, diced • 1/4 cup butter • 1 teaspoon dried rosemary
Preheat the oven to 275 degrees F.
In a large, oven-safe pot over medium-high heat on the stove-top, pour in the vegetable oil.
As the oil heats, season the chuck roast with salt and black pepper.
Once the oil is shimmering, place the chuck roast in and brown the meat on both sides.
Remove the meat and set it aside.
Add the carrots, celery, and onions to the pot and cook, stirring until the vegetables release their juices, for about 3 minutes. Make sure you scrape up any brown bits at the bottom of the pot as you stir the vegetables.
Add in the butter and cook until the onions become translucent, for about 5 minutes.
Sprinkle in the rosemary and stir.
Add the roast back into the pot, then cover the pot with the lid.
Put the pot in the oven and roast until the chuck roast becomes tender, about 2 1/2 to 3 hours.
Remove from the oven and season as desired.
