Ingredients• 2 eggs • 1 tablespoon milk • sea salt, to taste • pepper, to taste • 2 teaspoons butter, divided • 1 tablespoon parmesan, grated • 1 tablespoon cheddar, grated • 1 tablespoon chives or parsley, chopped • 1 tomato, diced • 2 thin ham slices
Gently mix together the eggs, milk, sea salt, and the pepper with a fork.
Melt the butter in a medium pan on medium high heat on the stove-top
Pour the egg mixture immediately into the hot pan and cook it, making sure the egg is being cooked evenly in the pan.
When the underside of the omelet is golden brown, decrease the heat to low.
Sprinkle the parmesan, cheddar, chives, and tomato on the egg and arrange the ham on top.
Cook the egg for 30 seconds.
Slide the omelet from the pan onto a plate, ensuring the omelet folds over itself.
Rub in the remaining butter.
