Guaco Tacos

As anyone placed in front of a bountiful bowl of guacamole knows, this creamy, herbaceous, refreshing dip often steals the show from any meal. Guaco Tacos uses this knowledge to its advantage by making the guac the star of the show from the beginning. Each soft, warmed tortilla is stuffed with spicy, smooth guacamole, crunchy lettuce, and hearty beans, so it's just as hearty as other tacos without distracting from that amazing guac flavor. Guaco Tacos are fast, easy, and as fun to make as they are to pronounce!


• 1 (14.5-ounce) can of whole tomatoes, drained, rinsed, patted dry • 2 Roma tomatoes, quartered • 1 onion, chopped, divided • 1 clove of garlic, coarsely chopped • 1/4 cup fresh cilantro • 1/2 jalapeño pepper • 4 avocados, halved, pits removed • salt, to taste • pepper, to taste • 12 (6-inch) whole-wheat tortillas • 1 (15-ounce) can of kidney beans, rinsed, drained • 2 cups romaine lettuce, torn


Step 1

Preheat the oven to 350 degrees F.

Step 2

Combine the canned tomatoes, fresh tomatoes, 1/2 of the onion, garlic, cilantro, and jalapeño in a food processor. Chop roughly without pureeing.

Step 3

Combine the avocados and remaining onion in a large bowl, mashing until smooth. Season the avocado mixture with salt and pepper.

Step 4

Spread the tortillas in a single layer on a baking sheet. Place in the oven until warm, about 5 minutes.

Step 5

Spread the tortillas with guacamole. Top the tortillas with the beans, salsa mixture, and lettuce. Serve.
