For the brining stage: • 1/4 cup kosher salt • 1/4 cup brown sugar • 2 tablespoons fresh ginger, minced • 2 tablespoons freshly ground black pepper • 1 tablespoon cinnamon • 3 cloves garlic, minced • 4 cups water • 1 turkey breast, skinless, deboned, and cut in half For the glaze: • 3 tablespoons honey • 1 chipotle chile in adobo sauce, minced • 2 tablespoons Dijon mustard • 2 tablespoons balsamic vinegar

Step 1

In a bowl, combine the salt, brown sugar, ginger, black pepper, cinnamon, garlic, and water.

Step 2

Pour the brine into a plastic resealable bag.

Step 3

Add the turkey breasts to the bag and massage until all of the meat is coated in the brine.

Step 4

Allow the turkey to brine in the fridge for at least 8 hours or overnight.

Step 5

Add the honey, minced chipotle chile, Dijon mustard, and vinegar all together into a small mixing bowl with a whisk. Set it aside.

Step 6

Set the grill to medium heat if you are using a grill. If you are using a charcoal grill, use a grill thermometer to maintain the heat at 350 degrees F.

Step 7

Move the turkey out from the fridge and discard the brine.

Step 8

Pat the turkey dry and brush it over with the glaze.
