Ingredients
For the brining stage: • 1/4 cup kosher salt • 1/4 cup brown sugar • 2 tablespoons fresh ginger, minced • 2 tablespoons freshly ground black pepper • 1 tablespoon cinnamon • 3 cloves garlic, minced • 4 cups water • 1 turkey breast, skinless, deboned, and cut in half For the glaze: • 3 tablespoons honey • 1 chipotle chile in adobo sauce, minced • 2 tablespoons Dijon mustard • 2 tablespoons balsamic vinegarDirections
In a bowl, combine the salt, brown sugar, ginger, black pepper, cinnamon, garlic, and water.
Pour the brine into a plastic resealable bag.
Add the turkey breasts to the bag and massage until all of the meat is coated in the brine.
Allow the turkey to brine in the fridge for at least 8 hours or overnight.
Add the honey, minced chipotle chile, Dijon mustard, and vinegar all together into a small mixing bowl with a whisk. Set it aside.
Set the grill to medium heat if you are using a grill. If you are using a charcoal grill, use a grill thermometer to maintain the heat at 350 degrees F.
Move the turkey out from the fridge and discard the brine.
Pat the turkey dry and brush it over with the glaze.
Place the glazed turkey onto the grill and cook it for 25-30 minutes, turning it over once. Continually baste both sides of the turkey with the honey Dijon glaze during the cooking process with a brush, letting it caramelize before adding another layer of glaze.
Transfer the turkey to a plate and let it rest for 5-10 minutes.
Slice and serve!
