Grilled Corn Salad

Grilled Corn Salad brings the brightness with sweet summer corn, crunchy toasted nuts, tangy pickled onions, and sharp parmesan. This salad is so delicious it only needs a touch of smooth olive oil as a dressing. Grilled Corn Salad will be a welcome addition to your summertime cookout menu since it pairs so well with burgers and hot dogs. You could even pile this salad on your burger for a true bite of summer fun!


• 4 ears of corn, shucked, grilled • 1/4 cup nuts such as walnuts, pecans, or pistachios, of your choice, toasted • 1 cup tender herbs, such as cilantro, basil, or parsley, of your choice, chopped • 1/2 cup pickled onions • 1/4 cup parmesan, freshly grated • juice of 1/2 lime • 1 tablespoon extra-virgin olive oil • kosher salt, to taste • freshly ground black pepper, to taste


Step 1

Carefully cut the corn kernels off the cob into a large bowl.

Step 2

Use the bottom of a measuring cup or a small pan to crush the toasted nuts into small pieces.

Step 3

Add the nuts, herbs, pickled onions, parmesan, lime juice, and oil to the bowl with the corn, stirring to combine.

Step 4

Taste for seasoning.
