Summertime is on the way, and summer calls for an equally sunny dessert! Grammie's Fresh Strawberry Pie captures the classic taste of lazy summer afternoons and the feel of cool breezes on flowering meadows: the strawberries are bright, juicy, and sweet, layered within chilled, smooth strawberry gelatin. With a buttery, flaky crust, Grammie's Fresh Strawberry Pie tastes like a childhood adventure on a plate, especially when topped with whipped cream. It really is just like how Grandma used to make it!
Ingredients
• 1 sheet refrigerated pie crust • 3/4 cup sugar • 2 tablespoons cornstarch • 1 cup water • 1 (3-ounce) package strawberry gelatin • 4 cups fresh strawberries, sliced • whipped cream, optional, to taste, for toppingDirections
Preheat the oven to 450 degrees F.
Unroll the pie crust into a 9-inch pie plate, trimming the edges.
Line the crust with a double layer of heavy-duty foil.
Bake the crust for about 8 minutes.
Remove the foil and bake until lightly golden brown, about 5 minutes.
Transfer the crust to a wire rack to cool, for about 20 minutes.
In a small saucepan, combine the sugar, cornstarch, and water until smooth.
Bring the mixture to a boil, cooking and stirring until thickened, about 2 minutes.
Remove the saucepan from the heat.
Stir in the gelatin until dissolved.
Refrigerate until the gelatin mixture is slightly cooled, about 15-20 minutes.
Arrange the strawberries in the cooled crust.
Pour the gelatin mixture over the berries.
Refrigerate the pie until set, about 20 minutes.
Serve with whipped cream.
