Gooey Lemon Bars

Few things are as classic as the joyful, excited murmur that follows a plate piled high with Gooey Lemon Bars as it leaves the kitchen and makes its way to the serving table... except of course when that very plate becomes empty in an instant. Gooey Lemon Bars have the sweet and tart sunny joy of lemon playfully dancing on your tastebuds with a melt-in-your-mouth buttery crust underneath. The texture is as ooey-gooey as the name suggests, all the better to appreciate the bursting citrus flavor. This is just like how Grandma used to make them... and in fact, they might be slightly better!


• 1 cup butter, softened • 2 cups white sugar, divided • 2 1/4 cups all-purpose flour • 4 eggs • 2 lemons, juiced


Step 1

Preheat the oven to 350 degrees F.

Step 2

In a medium bowl, blend the softened butter, 1/2 cup of white sugar, and 2 cups of flour.

Step 3

Press the butter mixture into the bottom of an ungreased 9x13-inch pan.

Step 4

Bake the crust until firm and golden, about 15-20 minutes.

Step 5

In a separate bowl, whisk together the remaining sugar and remaining flour.

Step 6

Add the eggs and lemon juice and whisk to combine.

Step 7

Pour the lemon mixture over the baked crust.

Step 8

Bake until cooked through, about 20 minutes. The bars will firm up as they cool.

Step 9

Allow the bars to cool completely.

Step 10

Cut and serve.
