Gluten-Free Banana Bread offers slice upon slice of moist, almost cake-like tenderness with a creamy banana flavor. With a touch of cinnamon warmth and chocolate chips, Gluten-Free Banana Bread has all the taste of a gluten-made loaf that anyone can enjoy.
Ingredients• 4 large ripe bananas, mashed • 2 large eggs • 2 teaspoons pure vanilla extract • 1/4 cup grass-fed butter, melted and cooled • 1 2/3 cups gluten-free all-purpose flour • 1 teaspoon baking soda • 1/2 teaspoon sea salt • 1/2 cup coconut sugar • 2 teaspoon ground cinnamon, optional • 2/3 cup chocolate chips, optional
Preheat the oven to 350 degrees F.
Line a 9x5-inch baking loaf pan with parchment paper.
Mash the bananas in a medium sized mixing bowl.
Add in the eggs, vanilla extract, and cooled melted butter until well-combined using a whisk.
In another mixing bowl, add in the gluten-free flour, the baking soda, sea salt, coconut sugar, cinnamon, and chocolate chips until it is fully combined.
Pour the dry mixture into the mixing bowl with the wet ingredients, mixing it until the batter is thoroughly combined. Don’t worry about overmixing.
Pour the batter into the parchment lined baking loaf pan, topping the batter with additional chocolate chips.
Bake the loaf on the center rack in the oven until the top is golden brown and the loaf has risen considerably, about 40 minutes.
Turn off the oven and allow the loaf to sit in the warm oven until the edges crisp slightly, about 5-10 minutes.
Take the loaf out of the oven and let it cool for around 30 minutes before slicing it and serving.
