Ingredients• 1 cup raspberries, fresh or frozen • 1 cup granulated sugar • 2 cups warm water plus 4 cups cold water, divided • 1 1/2 cups lemon juice, freshly squeezed • ice, enough to fill a pitcher • fresh mint, optional, for garnish
Add the raspberries, sugar, and 2 cups of warm water to a blender.
Blend until smooth.
Strain the raspberry mixture through a fine-mesh sieve into a pitcher, using a spatula to push the liquid through. Discard any seeds.
Add the cold water and lemon juice to the pitcher.
Add ice to the pitcher.
Serve, garnished with the mint.
