Can the floral, fruity notes of peach, the sharp pepperiness of ginger, and the savory flavor of chicken combine into something more? Ginger Peach Chicken proves that yes they can! Covered in a thick, sweet, garlic-infused sauce, these fatty chicken thighs are simply heavenly. Ginger Peach Chicken takes less than an hour to make, perfect for weeknights when you want a taste of luxury.

• 1 large peach, pureed • 1/4 cup soy sauce • 3 tablespoons brown sugar • 4 cloves garlic, pressed • 1 tablespoon ginger, freshly grated • 2 tablespoons cooking oil • 3 pounds chicken thighs, bone-in • 2 large shallots, thinly sliced • 1 large peach, thinly sliced • pinch of cayenne

Step 1

Add the pureed peach, soy sauce, brown sugar, pressed garlic, cayenne, and ginger together in a small mixing bowl, whisking until combined. Set the sauce aside.

Step 2

Preheat the oven to 375 degrees F.

Step 3

Preheat the cast-iron skillet or oven-safe cooking pan over medium-high heat.

Step 4

Add the cooking oil to the hot skillet.

Step 5

Place the chicken thighs in the hot oil and sear until well browned, about 4-5 minutes per side.

Step 6

Transfer the chicken to a plate.

Step 7

Add the shallots and peaches to the skillet, cooking until softened, about 3 minutes.

Step 8

Add the chicken back to the skillet, nestling it in with the shallots and peaches.

Step 9

Spread the sauce over the chicken, shallots, and peaches.

Step 10

Bake until the chicken is cooked through, reading 165 degrees F when inserted with a meat thermometer in the thickest part without touching bone, about 35-40 minutes.

Step 11

Serve hot!
