Ingredients• 1 large peach, pureed • 1/4 cup soy sauce • 3 tablespoons brown sugar • 4 cloves garlic, pressed • 1 tablespoon ginger, freshly grated • 2 tablespoons cooking oil • 3 pounds chicken thighs, bone-in • 2 large shallots, thinly sliced • 1 large peach, thinly sliced • pinch of cayenne
Add the pureed peach, soy sauce, brown sugar, pressed garlic, cayenne, and ginger together in a small mixing bowl, whisking until combined. Set the sauce aside.
Preheat the oven to 375 degrees F.
Preheat the cast-iron skillet or oven-safe cooking pan over medium-high heat.
