Ingredients• 3/4 cup butter, softened • 1 cup sugar • 1 large egg, room temperature • 1/4 cup dark molasses • 2 1/4 cups all-purpose flour • 2 teaspoons ground ginger • 1 teaspoon baking soda • 3/4 teaspoon ground cinnamon • 1/2 teaspoon ground cloves • 1/4 teaspoon salt • additional sugar, for coating
Preheat the oven to 350 degrees F.
In a large bowl, cream together the butter and sugar until light yellow in color and fluffy. This is critical for getting the perfect texture.
Beat in the egg and molasses.
In a separate bowl, combine the flour, ginger, baking soda, cinnamon, cloves, and salt.
Gradually add the flour mixture to the butter and sugar mixture, mixing it constantly, until well incorporated.
Roll the dough into 1-1/2-inch balls.
Roll the dough balls in the additional sugar.
Place the dough balls onto an ungreased baking sheet, about 2 inches apart from each other so they have room to expand.
Bake until puffy and lightly browned, about 10-12 minutes.
Remove the cookies from the oven and let them cool on a wire rack.
Serve warm or at room temperature.
