IngredientsFor the chicken: • 2 eggs, lightly beaten • salt, to taste • pepper, to taste • 1/2 cup all-purpose flour • 1/2 cup cornstarch • vegetable oil, to taste, for frying • 1 1/2 pounds chicken thighs, boneless, skinless, and cut into 1-inch pieces For the sauce: • 2 teaspoons vegetable oil • 2 teaspoons garlic, minced • 1/2 teaspoon red pepper flakes, crushed • 3/4 cup low-sodium chicken broth • 2 tablespoons hoisin sauce • 2 tablespoons brown sugar • 1/4 cup low-sodium soy sauce • 1 tablespoon cornstarch For the garnish: • 2 teaspoons sesame seeds, optional • 2 tablespoons green onions, optional, sliced
Add the eggs into a mixing bowl.
Season the eggs with salt and pepper to taste.
In a separate shallow bowl, mix together the flour and cornstarch.
In a deep pot, heat 3 inches of oil to 350 degrees F.
Dip each piece of chicken into the egg mixture.
Coat each piece of chicken in the flour mixture.
Repeat the process until all of the chicken is coated.
In batches, fry the chicken in the heated oil until browned, about 5 minutes. Be careful not to fry too many chicken pieces at once to avoid clumping. 6-8 pieces at a time should be a good batch size.
Heat 2 teaspoons of the vegetable oil in a saucepan over medium heat.
Add the garlic and crushed red pepper flakes and cook for 30 additional seconds.
In a mixing bowl, whisk together the chicken broth, hoisin sauce, brown sugar, soy sauce, and cornstarch.
Add the liquid mixture to the saucepan and bring to a simmer.
Allow the sauce to thicken, cooking for 2-3 minutes.
Add the chicken to the saucepan and toss to coat with the sauce.
Sprinkle the chicken with sesame seeds and green onions and serve.
