Ingredients• 3 tablespoons butter, divided • 2 tablespoons extra-virgin olive oil, divided • 4 (4-ounce) mahi-mahi fillets • kosher salt, to taste • freshly ground black pepper, to taste • 1 pound asparagus • 3 cloves garlic, minced • 1/4 teaspoon crushed red pepper flakes • 1 lemon, sliced • zest and juice of 1 lemon • 1 tablespoon parsley, freshly chopped, plus more for garnish
In a large skillet over medium heat, melt 1 tablespoon butter and 1 tablespoon olive oil.
Add the mahi-mahi tuna.
Season with salt and pepper.
Cook until the mahi-mahi is golden and cooked through at 145 degrees F internally, about 4-5 minutes per side.
Transfer the mahi-mahi to a plate.
Add the remaining olive oil to the skillet.
Add the asparagus and cook until tender, about 2-4 minutes.
Season the asparagus with salt and pepper.
Transfer the asparagus to a plate.
Add the remaining butter to the skillet.
Once the butter is melted, add the garlic and red pepper flakes and cook until fragrant, about 1 minute.
Stir in the lemon, lemon zest, lemon juice, and parsley.
Remove the skillet from the heat.
Return the mahi-mahi and asparagus to the skillet and spoon the sauce over them.
Garnish with more parsley.
