Garlic Mahi-Mahi

Ingredients

• 3 tablespoons butter, divided • 2 tablespoons extra-virgin olive oil, divided • 4 (4-ounce) mahi-mahi fillets • kosher salt, to taste • freshly ground black pepper, to taste • 1 pound asparagus • 3 cloves garlic, minced • 1/4 teaspoon crushed red pepper flakes • 1 lemon, sliced • zest and juice of 1 lemon • 1 tablespoon parsley, freshly chopped, plus more for garnish

Directions

Step 1

In a large skillet over medium heat, melt 1 tablespoon butter and 1 tablespoon olive oil.

Step 2

Add the mahi-mahi tuna.

Step 3

Season with salt and pepper.

Step 4

Cook until the mahi-mahi is golden and cooked through at 145 degrees F internally, about 4-5 minutes per side.

Step 5

Transfer the mahi-mahi to a plate.

Step 6

Add the remaining olive oil to the skillet.

Step 7

Add the asparagus and cook until tender, about 2-4 minutes.

Step 8

Season the asparagus with salt and pepper.

Step 9

Transfer the asparagus to a plate.

Step 10

Add the remaining butter to the skillet.

Step 11

Once the butter is melted, add the garlic and red pepper flakes and cook until fragrant, about 1 minute.

Step 12

Stir in the lemon, lemon zest, lemon juice, and parsley.

Step 13

Remove the skillet from the heat.

Step 14

Return the mahi-mahi and asparagus to the skillet and spoon the sauce over them.

Step 15

Garnish with more parsley.

Step 16

Serve.
