Creamy mac and cheese made from your favorite recipe mixed with crispy kettle chips and fried to perfection, Fried Mac and Cheese Bites are a guilty pleasure you can’t help but love. Ingredients• 1 recipe baked macaroni and cheese or a 9x13-inch pan of your favorite macaroni and cheese recipe, chilled overnight • 2 (8.5 ounce) bags kettle-cooked potato chips, any flavor, crushed • 2-3 eggs • 6 cups canola or peanut oil
Using a 1 1/2-inch ladle or a spoon, scoop out about 2 tablespoons of the macaroni and cheese and shape it into a 2-inch rounded ball. Make sure to compress the balls lightly so that they do not fall apart, but not so tightly that it ruins the texture.
Pour the crushed chips into a shallow bowl or a plate.
In a separate shallow medium-sized bowl, beat together the two eggs until the eggs are smooth.
Dip the mac and cheese balls into the whisked egg mixture.
Roll the egg-coated balls in the potato chips, making sure to firmly press the chips into the macaroni balls to create the crust for the balls.
Keep repeating the coating process until you have about 10-12 balls fully coated in the eggs and chips.
Heat the oil in a 4-quart pot until the oil registers 350 degrees F.
Fry up to 6 mac and cheese balls at a time for approximately 3 min and 30 seconds and the balls are golden brown.
Drain the fried balls on some paper towels and serve.
