Ingredients• 1 pound lean ground beef, 90% lean • 1 large onion, chopped • 2 cups salsa • 1 (15-ounce) can of black beans, rinsed, drained • 1/4 cup reduced-fat Italian salad dressing • 2 tablespoons reduced-sodium taco seasoning • 1/4 teaspoon ground cumin • 6 (8-inch) flour tortillas • 3/4 cup reduced-fat sour cream • 1 cup reduced-fat Mexican cheese blend, shredded • 1 cup lettuce, shredded • 1 medium tomato, chopped • 1/4 cup fresh cilantro, minced
Preheat the oven to 400 degrees F.
Coat a 7x11-inch baking dish with cooking spray.
In a large skillet over medium heat, cook the beef and onion until the meat is no longer pink, about 6-8 minutes.
Drain the fat from the skillet.
Stir in the salsa, beans, dressing, taco seasoning, and cumin.
Place 1/2 of the tortillas in the prepared baking dish.
Layer in 1/2 of the meat mixture, 1/2 of the sour cream, and 1/2 of the cheese.
Repeat the layers, starting with the tortillas.
Cover and bake for 25 minutes.
Uncover and bake until heated through, about 5-10 minutes.
Let stand for 5 minutes.
Top with the lettuce, tomato, and cilantro.
