Farro Salad

This delightful salad is filled with flavors of the Mediterranean! The tomatoes give a slight sweetness, the lemon and feta give a bit of tang, and the farro provides a lovely, chewy texture. Eat by itself or serve alongside your favorite fish or roasted chicken!


• 2 pints cherry or grape tomatoes, halved • 1 tablespoon olive oil • 1/2 tablespoon sugar • 1 garlic clove, minced • 1/2 teaspoon salt • 1/2 teaspoon pepper • 1/2 teaspoon dried thyme • 2 cups cooked farro • 1/2 cup crumbled feta cheese1/2 cup pine nuts1/4 cup fresh herbs, like parsley, basil, oregano, cilantro, etc. • salt and pepper to taste Lemon Vinaigrette: • 3 tablespoons lemon juice • 2 tablespoons champagne vinegar • 1 1/2 tablespoons honey • 2 garlic cloves finely minced or pressed • 1/4 teaspoon salt • 1/4 teaspoon pepper • 1/2 cup extra virgin olive oil


Step 1

Preheat your oven to 375 degrees F. Line a baking sheet with parchment paper. Drizzle cherry tomatoes with salt and olive oil. Roast in the oven for 45 minutes.

Step 2

Cook the farro according to package instructions. Once cooked, toss with a bit of olive oil to prevent it from sticking together.

Step 3

Toast the pine nuts in a skillet over medium-low heat until slightly golden and fragrant. Toss frequently to prevent burning.

Step 4

To make the dressing, simply whisk all of the ingredients together in a bowl.

Step 5

Now, it's time to assemble the salad. Combine the farro and tomatoes together in a large salad bowl. Toss in the feta, roasted pine nuts, and fresh herbs of your choosing. Add 1/4 cup of dressing at a time, to make sure you don't add too much. Season with salt and pepper to taste.
