Ingredients• 1 1/4 cups whipping cream • 1 tablespoon fine sugar • 1 2/3 cups ready-made meringues • 3 cups fresh strawberries • confectioners' sugar, optional, to taste, for topping
Place the whipping cream in a large mixing bowl.
Add in the sugar and whip with an electric whisk until the cream is light and fluffy. Do not over whip.
Break the meringue into large, bite-sized chunks.
Gently stir the meringue into the cream. Do not worry if some of the meringue crumbles.
Place half of the strawberries into another large mixing bowl.
Press the strawberries in the bowl gently with the back of a fork to break up the strawberries slightly and release some of their juices. Do not be too heavy-handed, as this should not be a puree.
Stir the strawberries gently into the whipped cream.
Halve and then quarter the remaining strawberries.
Place the cream mixture into a 7-inch glass serving dish.
Top the cream with the crushed strawberry pieces.
Chill in the refrigerator for 30 minutes.
Sprinkle with confectioners' sugar.
