Ingredients• 1 (28 ounce) jar pasta sauce • 1 (8 ounce) package no-boil lasagna noodles • 15 ounces part-skim ricotta cheese • 3 cups lightly steamed vegetables, of your choice • 8 ounces part-skim mozzarella cheese, grated
Preheat the oven to 350 degrees F.
In a 9x13-inch casserole dish spread a thin layer of the pasta sauce on the bottom.
Layer the lasagna noodles over the sauce. This should take about 3-4 noodles.
Place the ricotta in a bowl and add about 1/4 cup of water, mixing until fully incorporated.
Spread 1/3 of the ricotta mixture over the pasta.
Spread 1/3 of the remaining pasta sauce over the cheese.
Spread 1/3 of the vegetables over the sauce.
Sprinkle 1/3 of the mozzarella over the veggies.
Repeat the layering twice starting with the noodles and ending with the mozzarella.
Cover the casserole dish and bake until the noodles are tender, about 35-40 minutes.
Uncover and continue baking until the cheese starts to become golden, about 5 minutes.
After removing it from the oven, allow the lasagna to sit for 5 minutes before serving.
