Easy Slow Cooker Taco Soup

Throw these simple ingredients into your slow cooker in just 10 minutes and, voila, 6 hours later you have a delicious Taco Soup! With ground beef (or your desired meat), corn, black beans, tomatoes, and delicious seasoning—you'll love this super-easy and flavorful dish.


• 1 yellow onion, diced • 2 tablespoons olive oil • 2 garlic cloves • 1 (28 ounce) can of corn, drained • 1 (28 ounce) can of black beans, rinsed and drained • 1 (28 ounce) can of diced tomatoes • 3 cups water • 1 packet ranch dressing seasoning • 1 teaspoon salt • 1/2 teaspoon pepper • 1 teaspoon cumin • 2 tablespoons chili powder • 1 teaspoon cilantro • 2 pounds ground beef, turkey, or venison • Toppings, for serving (cheese, sour cream, avocado, and tortilla chips, if desired)


Step 1

In a large saucepan, heat olive oil and saute garlic and onion together.

Step 2

Add ground beef to the saucepan and brown it until it's cooked through.

Step 3

Drain the beef mixture and add it to the slow cooker.

Step 4

Add the corn, black beans, diced tomatoes, and water into the slow cooker.

Step 5

Add salt, pepper, cumin, chili powder, cilantro, and ranch dressing packet. Stir together until mixed well.

Step 6

Heat on low setting for 4-6 hours.

Step 7

Serve with cheese, sour cream, avocado, and tortilla chips.
