Ingredients• 2-3 pounds butternut squash, cubed • 1–2 tablespoons olive oil • fine sea salt, to taste
Preheat the oven to 400 degrees F.
Peel and cut the butternut squash into the desired cube size.
Drizzle the diced squash with a tablespoon or two of the olive oil, tossing until the squash is evenly coated.
Arrange the squash in an even layer (no overlapping) on a large baking sheet.
