Easy Roasted Butternut Squash

• 1 butternut squash (2-3 pounds) • 1–2 tablespoons olive oil (or any neutral-flavored oil) • fine sea salt • optional: extra seasonings


Step 1

Preheat oven to 400 degrees F.

Peel and cut the butternut squash into the desired size of cubes.

Step 3

Drizzle the diced squash with a tablespoon or two of oil, then toss until the squash is evenly coated.

Step 4

Arrange the squash in an even layer (no overlapping) on a large baking sheet. Season it with salt, plus any extra preferred seasonings.

Step 5

Cook the butternut squash for about 40 minutes until the squash is tender and lightly golden on the edges.
