Ingredients• 2 tablespoons extra-virgin olive oil, plus more as needed • 1 1/2 pounds chicken thighs, skinless and boneless • 1/2 cup onion, chopped • 2 cloves garlic, minced • 2 cups heirloom cherry tomatoes, sliced in half lengthwise • 4 cups baby spinach • 1/4 cup basil, chopped • 2 tablespoons parmesan cheese, shredded, plus more to taste • salt, to taste • ground black pepper, to taste
In a large skillet over medium-high heat on the stove-top, heat the olive oil.
Add the chicken and cook until it's just starting to be cooked through and is browned on both sides, about 4-5 minutes. Set the chicken aside.
Add the onion and cook for 3-4 minutes.
Add the garlic and cook until it is fragrant and the onion in the skillet is tender and slightly golden-brown, for about 1-2 minutes.
Return the chicken to the skillet.
Add the tomatoes and cook for 2-3 minutes.
Add the basil and spinach and cook until the spinach is wilted, for about 2-3 minutes.
Using a meat thermometer, check that the thickest part of the chicken reads 165 degrees F. If not, continue sautéing until fully cooked through.
Stir in the parmesan and season with salt and pepper.
