Easy Cream Cheese Chicken

• 2 teaspoons extra-virgin olive oil • 1 small onion, chopped • 8 ounces white button mushrooms, sliced • 2 cloves garlic, minced • 1 1/2 pounds boneless, skinless chicken breast, cut in strips • 3/4 teaspoon kosher salt • 1/2 teaspoon black pepper • 4 ounces regular or reduced-fat plain cream cheese • 1/4 cup low-sodium chicken broth • 1/4-1/2 cup shredded mozzarella cheese For Serving: • steamed rice • 3 tablespoons chopped, fresh parsley, if desired


Step 1

To begin, heat a large skillet over medium heat, then add oil. Add the mushrooms and onions and sauté for 4-5 minutes. Add the garlic and sauté for 30 seconds.

Step 2

Slice the chicken into strips and season with salt and pepper. Put the heat to medium-high, and add the seasoned chicken to the pan. Sear the chicken for 6-8 minutes, turning them over once, until golden brown.

Step 3

Add in the chicken broth and cream cheese and stir until the cream cheese is melted fully and combined.

Step 4

Sprinkle the mozzarella over the pan, cover with the lid, reduce the heat and cook for 2-3 minutes, or until the chicken is fully cooked. Use the salt and pepper to season to taste.

Step 5

Serve the mushrooms and chicken over steamed rice. Garnish with the parsley, if desired.
