Ingredients• 2 pounds russet potatoes • 3 tablespoons olive oil • 1 teaspoon kosher salt • 1/4 teaspoon black pepper • 1/2 teaspoon garlic powder • 1/2 teaspoon paprika • 1/2 teaspoon onion powder • 1 tablespoon parsley, optional, minced, for garnish
Preheat the oven to 400 degrees F.
Cover a baking tray with foil or parchment paper.
Peel and cube the potatoes.
Move the potatoes to a medium-sized mixing bowl.
Toss the cubed potatoes with the olive oil, salt, pepper, garlic powder, paprika, and onion powder.
Put the potatoes onto the prepared sheet, spreading them out evenly. Make sure the potatoes are not on top of each other.
Bake the potatoes in the oven for 20-25 minutes.
Move the potatoes out from the oven, and toss them with a spatula.
Place them back into the oven to broil until golden brown and crispy, about 4-5 minutes. Make sure to watch the potatoes carefully so they do not burn.
Garnish with the fresh minced parsley.
