• 2 russet potatoes, peeled • 3 tablespoons clarified butter • salt, to taste • ground black pepper, to taste • cayenne pepper, to taste • paprika, to taste

Fill a large bowl with cold water.

Shred the potatoes in the cold water.

Stir the potatoes until the water is cloudy.

Drain the potatoes and then cover them again with cold, clean water.

Repeat the process until the water runs clear. This removes the excess starch from the potatoes and helps ensure a crispy texture in the final product.

Drain the potatoes a final time and pat them as dry as possible with paper towels.
