Ingredients• 2 russet potatoes, peeled • 3 tablespoons clarified butter • salt, to taste • ground black pepper, to taste • cayenne pepper, to taste • paprika, to taste
Fill a large bowl with cold water.
Shred the potatoes in the cold water.
Stir the potatoes until the water is cloudy.
Drain the potatoes and then cover them again with cold, clean water.
Repeat the process until the water runs clear. This removes the excess starch from the potatoes and helps ensure a crispy texture in the final product.
Drain the potatoes a final time and pat them as dry as possible with paper towels.
Squeeze any excess moisture from the potatoes. Moisture can make the hash browns less crispy.
Heat the clarified butter in a large non-stick pan over medium heat.
Sprinkle the shredded potatoes into the hot butter.
Season the potatoes with salt, pepper, cayenne, and paprika.
Cook the potatoes until a brown crust forms on the bottom, about 5 minutes.
Flip the potatoes and continue to cook until browned all over, about 5 minutes.
