Dessert Enchiladas

The best way to conclude a meal of burritos, tacos, or fajitas is with Dessert Enchiladas! Filled with jammy, cinnamon-infused apples and covered in a smoky-sweet and rich brown sugar sauce, Dessert Enchiladas are a dessert that will have you licking your fingers. They cook just like traditional enchiladas and are ready in just over half an hour, so you can have them ready for your Taco Tuesday in a snap. Don't worry about leftovers, there won't be any!


• 1 (21-ounce) can apple pie filling • 6 (8-inch) flour tortillas • 1 teaspoon ground cinnamon, plus more for optional sprinkling • 1/3 cup margarine • 1/2 cup white sugar • 1/2 cup packed brown sugar • 1/2 cup water


Step 1

Preheat the oven to 350 degrees F.

Step 2

Lightly grease an 8x8-inch baking pan.

Step 3

Spoon the fruit evenly onto all of the tortillas.

Step 4

Sprinkle the apples with cinnamon.

Step 5

Roll up the tortillas and place them, seam side down, in the prepared baking pan.

Step 6

In a medium saucepan on the stove-top over medium heat, combine the margarine, white sugar, brown sugar, and water.

Step 7

Bring the mixture to a boil and then reduce the heat to low.

Step 8

Let the mixture simmer, stirring constantly, for about 3 minutes.

Step 9

Pour the sauce evenly over the tortillas.

Step 10

Sprinkle the top with the extra cinnamon.

Step 11

Bake for 20 minutes.

Step 12

Serve hot!
