Preheat the oven to 375 degrees F.
Line a baking sheet with parchment paper.
Melt the butter in a large skillet over medium heat.
Add the apples to the skillet and cook, stirring occasionally, for about 3 minutes.
Add the brown sugar, flour, lemon juice, cinnamon, ginger, and nutmeg.
Cook and stir until the apples are tender and the sauce is thickened, about 3 minutes.
Remove the skillet from the heat.
Stir in 1 teaspoon of the vanilla extract and set the mixture aside to cool.
Unfold one puff pastry sheet onto a piece of parchment paper, pinching the seams together as necessary. Cut the pastry sheet into four even squares.
