Dad's Country Breakfast Skillet

Dad's Country Breakfast Skillet is the perfect way to get your morning started right! With yummy flavors combined with all the greatest comfort foods, you will love every bite.


• 3/4 pound bacon (about 12 slices) • 4 eggs • 1 cup diced red potatoes • 1/2 cup chopped green peppers • 1/4 cup shredded cheddar cheese • Fresh parsley • Salt and pepper to taste


Step 1

Cut bacon into 1-inch pieces. Place the bacon pieces into a skillet over medium heat. Cook until the bacon is crisp, then drain half of the fat, bringing it back to the stovetop.

Step 2

Add potatoes and pepper to the pan. Cook until potatoes are golden brown–about 8-10 minutes.

Step 3

Place the potato and bacon mixture into a bowl. Place the skillet back on the stovetop.

Step 4

Add four eggs into the skillet. Don’t stir. Let them cook for 1 minute or until the egg whites set.

Step 5

Carefully place the potato and bacon mixture around the eggs, sprinkling some cheese on top, and cook for another minute.

Step 6

Allow the skillet to cool before serving!
