Ingredients• 2 pounds sweet potatoes • 1 tablespoon cornstarch • 1/2 teaspoon fine sea salt • 2 tablespoons extra-virgin olive oil Optional spices: • freshly ground black pepper, to taste • cayenne pepper, to taste • garlic powder, to taste
Preheat the oven to 425 degrees F with the racks in the lower and upper area of the oven.
Line two large baking trays with parchment paper.
Peel the sweet potatoes and cut them into long thin pieces around 1/4 inch thick.
Cut the potatoes into fries of similar size. This helps ensure the fries will bake evenly in the oven.
