For the pasta salad: • 1 pound dry pasta, elbow, bow tie, rotini, or similar • 5 cups romaine lettuce, chopped • 1-1 1/2 pounds strawberries, sliced • 2 avocados, diced • 3/4 cup feta cheese, crumbled • 3/4 cup almonds, slivered or sliced For the poppy seed dressing: • 2/3 cup Greek yogurt • 1/4 cup apple cider vinegar • 1/4 cup extra-virgin olive oil • 1/4 cup honey • 1/2 teaspoon salt • 1/2 teaspoon ground dry mustard or 1 teaspoon dijon mustard • 1 tablespoon poppy seeds


Step 1

Cook the pasta to al dente according to the package directions.

Drain the pasta and let cool for 5 minutes.
