Cranberry French Toast

For the cranberry topping: • 6 ounces fresh cranberries • 1/4 cup maple syrup • 3 tablespoons brown sugar • 1/2 teaspoon cinnamon For the French toast: • 2 eggs • 1 tablespoon whole milk • 1 teaspoon vanilla • 1/4 teaspoon cinnamon • 1/2 tablespoon brown sugar • 4 slices bread of choice, thick


Step 1

Combine the cranberries, maple syrup, brown sugar, and cinnamon in a small saucepan over medium heat on the stove-top. Mix well and cover.

Step 2

Let the cranberry mixture cook for about 15 minutes.

Step 3

Take off the lid and stir well.

Step 4

Let it cook uncovered for another 2-3 minutes.

Step 5

Take the mixture off the heat and set aside.

Preheat a large cooking pan over medium heat and lightly grease it.

In a wide and shallow bowl, whisk the eggs, milk, vanilla, cinnamon, and sugar until smooth.

Place the bread slices in the egg mixture, coating well on both sides.

Step 9

Place the saturated bread in the greased cooking pan and cook for a few minutes on each side, until nicely golden brown and firm to the touch.

Step 10

Serve the french toast warm with the cranberry topping.
