The Cowgirl Breakfast Casserole has everything you need to get yourself ready for the day, from fluffy eggs to melty cheese, to spicy and savory chorizo. • 12 corn tortillas, cut into strips • 12 ounces chorizo, cooked and fat drained • 1 cup Mexican blend cheese, shredded • 3 green onions, chopped • 4 ounces red pimientos, diced and drained • 8 large eggs, beaten until frothy


Step 1

Preheat the oven to 350 degrees F.

Step 2

Spray a 7x11-inch baking dish with nonstick cooking spray, and set it aside.

Step 3

Combine the tortilla strips, chorizo, cheese, onions, pimientos, and eggs in the prepared baking dish, spreading the mixture evenly.

Step 4

Bake for 25 minutes on the center rack.

Step 5

Let cool before cutting into squares.
