Ingredients• 12 ounces chorizo, cooked and fat drained • 12 corn tortillas, cut into strips • 1 cup shredded, Mexican blend cheese • 4 ounces diced red pimientos, drained • 3 green onions, chopped • 8 large eggs, beaten until frothy
To begin, preheat the oven to 350 degrees F.
Spray an 11x7-inch baking dish with nonstick cooking spray, set aside.
