Copycat Cilantro Lime Rice

• 1 cup extra long grain rice or basmati rice • 2 cups water • 3 teaspoons vegetable oil, divided • 1 teaspoon salt • juice of 1/2 lime • 3 tablespoons cilantro, fresh, chopped


Step 1

In a small heavy pot, combine the rice, water, 1 teaspoon oil, and the salt.

Step 2

Bring the water to a boil on the stove-top over high heat until most of the water evaporates.

Step 3

When the water has been reduced to just skimming the top of the rice, reduce the heat to low and cover the pot until the water has been completely absorbed, for about 20 minutes.

Step 4

Turn off the heat and let the rice sit covered for 5 minutes.

Step 5

In a medium serving bowl, combine the cooked rice with the remaining 2 teaspoons oil, lime juice, and the cilantro, tossing until completely incorporated. Serve hot!
