Ingredients• 1 1/4 cup all-purpose flour • 1/2 teaspoon baking soda • 1/4 teaspoon salt • 1/2 cup butter • 1/2 cup brown sugar, packed • 1/2 cup white sugar • 1 egg • 1/2 teaspoon vanilla extract • 1 1/3 cup coconut flakes
Preheat the oven to 350 degrees F.
Whisk together the flour, baking soda, and salt in a mixing bowl.
In a separate mixing bowl or the bowl of a stand mixer, cream together the butter, brown sugar, and white sugar.
Add the egg and vanilla to the butter and sugar mixture and continue beating until light and fluffy.
Add the flour mixture slowly to the butter mixture until just incorporated, making sure not to overmix.
Fold in the coconut.
Drop the cookie dough for a spoon 3 inches apart on an ungreased baking sheet.
Bake until lightly golden, about 8-12 minutes.
