Coastal Crab Stick Salad

This Coastal Crab Stick Salad is the best dinner during the busy week. It’s quick and easy to assemble—and it's a nice change of pace from a traditional side salad. You can prepare this dish with imitation crab meat for convenience, or swap for local crab meat to enhance the freshness!


• 11 ounces imitation crab meat, cut into bite-sized pieces • 1 English cucumber, chopped • 3 eggs • 1/2 cup rice • 1 small can of corn • 3 tablespoons mayo • 3 tablespoons yogurt • a small bunch of dill, chopped • 1/2 teaspoon ground black pepper, or to taste • 1 teaspoon salt, or to taste


Step 1

Cook the rice per package instructions. Allow time to cool.

Step 2

Hard boil the eggs in boiling water. Then peel and chop them.

Step 3

Mix together the cooked rice, eggs, crab meat, cucumber, corn, mayo, yogurt, and dill in a large bowl. Season and serve chilled.
