This Coastal Crab Stick Salad is the best dinner during the busy week. It’s quick and easy to assemble—and it's a nice change of pace from a traditional side salad. You can prepare this dish with imitation crab meat for convenience, or swap for local crab meat to enhance the freshness!
Ingredients• 11 ounces imitation crab meat, cut into bite-sized pieces • 1 English cucumber, chopped • 3 eggs • 1/2 cup rice • 1 small can of corn • 3 tablespoons mayo • 3 tablespoons yogurt • a small bunch of dill, chopped • 1/2 teaspoon ground black pepper, or to taste • 1 teaspoon salt, or to taste
Cook the rice per package instructions. Allow time to cool.
Hard boil the eggs in boiling water. Then peel and chop them.
Mix together the cooked rice, eggs, crab meat, cucumber, corn, mayo, yogurt, and dill in a large bowl. Season and serve chilled.
