Classic Macaroni Salad

The perfect side for your next outdoor cookout! This recipe is easy to make ahead and enjoy later. Serve this Macaroni Salad alongside any BBQ or grilled meat.


• 1 pound elbow pasta • 2 celery ribs minced • 1 red and 1 green bell pepper, seeded and chopped • 1/2 red onion, chopped • 1 cup mayonnaise • 1/4 cup plus 1 tablespoon pickle juice • 2 teaspoons granulated sugar • 1 1/2 tablespoons Dijon mustard • Kosher salt and freshly ground black pepper


Step 1

Bring a large pot of water to boil and cook pasta according to package instructions. Darin and rinse under cold water until cooled.

Step 2

Transfer cooked pasta to a large mixing bowl. Add celery, bell peppers, and red onion. In a separate small mixing bowl, combine mayonnaise, pickle juice, sugar, and mustard, plus salt and pepper to taste.

Step 3

Add the dressing to the macaroni and toss until all contents are evenly coated. Refrigerate for 1 hour or overnight before serving.
